Ingredients

  • 125g all-purpose flour
  • 150g granulated sugar
  • 1½ tsp baking powder
  • ¼ tsp salt
  • 60g unsalted butter, softened
  • 120ml whole milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 100g unsalted butter, softened (for frosting)
  • 200g powdered sugar (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp milk (for frosting)

Steps

  1. Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
  2. In a bowl, sift together the flour, baking powder, and salt.
  3. In a separate mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and beat well.
  5. Gradually add the dry ingredients alternately with the milk, mixing until just combined.
  6. Divide the batter evenly into the cupcake liners, filling each about two-thirds full.
  7. Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from the oven and let cool completely on a wire rack before frosting.
  9. For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, vanilla extract, and milk, beating until smooth and fluffy.
  10. Pipe or spread the buttercream over each cooled cupcake.

  • For a light lemon twist, add finely grated lemon zest to the batter or frosting.
