Classic Vanilla Cupcakes with Buttercream Frosting

Ingredients
- 125g all-purpose flour
- 150g granulated sugar
- 1½ tsp baking powder

- 60g unsalted butter, softened
- 120ml whole milk
- 1 large egg
- 1 tsp vanilla extract
- 100g unsalted butter, softened (for frosting)
- 200g powdered sugar (for frosting)
- 1 tsp vanilla extract (for frosting)
- 2 tbsp milk (for frosting)
Steps
- Preheat your oven to 180°C (350°F) and line a muffin tin with cupcake liners.
- In a bowl, sift together the flour, baking powder, and salt.
- In a separate mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and beat well.
- Gradually add the dry ingredients alternately with the milk, mixing until just combined.
- Divide the batter evenly into the cupcake liners, filling each about two-thirds full.
- Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool completely on a wire rack before frosting.
- For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, vanilla extract, and milk, beating until smooth and fluffy.
- Pipe or spread the buttercream over each cooled cupcake.

- Ensure butter and egg are at room temperature for better mixing and texture.
- Do not overmix the batter to keep the cupcakes soft and tender.
- For a light lemon twist, add finely grated lemon zest to the batter or frosting.
