Classic European-Style Fried Rice with Vegetables and Egg

Fried rice is a versatile and quick meal perfect for dinner. This European-style recipe combines simple ingredients to create a delicious and satisfying dish. It’s a perfect way to use leftover rice and fresh vegetables.

Ingredients

  • 250 g cooked long-grain rice (preferably day-old)
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 carrot, diced
  • 100 g frozen peas, thawed
  • 2 eggs, lightly beaten
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Steps

  1. Heat 1 tablespoon of olive oil in a large frying pan or wok over medium heat. Add the onion and carrot, sautéing until softened, about 5 minutes.
  2. Add the garlic and cook for another minute until fragrant.
  3. Push the vegetables to one side of the pan, add the remaining olive oil, then pour in the beaten eggs. Scramble the eggs gently until just set.
  4. Add the cooked rice and peas to the pan. Stir well to combine all ingredients.
  5. Pour in the soy sauce, season with salt and pepper, and stir-fry everything for 3-4 minutes, ensuring the rice is heated through.
  6. Remove from heat and garnish with chopped parsley if desired. Serve immediately.
