Classic European-Style Fried Rice with Vegetables and Egg
Fried rice is a versatile and quick meal perfect for dinner. This European-style recipe combines simple ingredients to create a delicious and satisfying dish. It’s a perfect way to use leftover rice and fresh vegetables.
Ingredients
- 250 g cooked long-grain rice (preferably day-old)
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 1 carrot, diced
- 100 g frozen peas, thawed
- 2 eggs, lightly beaten
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Steps
- Heat 1 tablespoon of olive oil in a large frying pan or wok over medium heat. Add the onion and carrot, sautéing until softened, about 5 minutes.
- Add the garlic and cook for another minute until fragrant.
- Push the vegetables to one side of the pan, add the remaining olive oil, then pour in the beaten eggs. Scramble the eggs gently until just set.
- Add the cooked rice and peas to the pan. Stir well to combine all ingredients.
- Pour in the soy sauce, season with salt and pepper, and stir-fry everything for 3-4 minutes, ensuring the rice is heated through.
- Remove from heat and garnish with chopped parsley if desired. Serve immediately.
