Ingredients

  • 100g dark chocolate (70% cocoa)
  • 100g unsalted butter
  • 120g powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 50g all-purpose flour
  • Butter and cocoa powder for greasing

Steps

  1. Preheat the oven to 200°C (180°C fan) and butter four ramekins, then dust with cocoa powder.
  2. Melt the dark chocolate and butter together in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth.
  3. In a separate bowl, whisk the eggs, egg yolks, and powdered sugar until pale and slightly thickened.
  4. Gently fold the melted chocolate mixture into the egg mixture.
  5. Sift the flour over the chocolate mixture and carefully fold until just combined.
  6. Divide the batter evenly among the prepared ramekins.
  7. Bake for 10-12 minutes, until the edges are firm but the centre is still soft.
  8. Remove from oven and let cool for 1 minute, then carefully invert each ramekin onto a plate and serve immediately.
