Classic European Chocolate Lava Cake Recipe

Ingredients
- 100g dark chocolate (70% cocoa)
- 100g unsalted butter
- 120g powdered sugar
- 2 large eggs
- 2 large egg yolks
- 50g all-purpose flour
- Butter and cocoa powder for greasing
Steps
- Preheat the oven to 200°C (180°C fan) and butter four ramekins, then dust with cocoa powder.
- Melt the dark chocolate and butter together in a heatproof bowl over simmering water or in short bursts in the microwave, stirring until smooth.
- In a separate bowl, whisk the eggs, egg yolks, and powdered sugar until pale and slightly thickened.
- Gently fold the melted chocolate mixture into the egg mixture.
- Sift the flour over the chocolate mixture and carefully fold until just combined.
- Divide the batter evenly among the prepared ramekins.
- Bake for 10-12 minutes, until the edges are firm but the centre is still soft.
- Remove from oven and let cool for 1 minute, then carefully invert each ramekin onto a plate and serve immediately.
