Ingredients

  • 3 ripe bananas (about 350g without skin)
  • 150g plain flour
  • 100g granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 60g unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • Optional: 50g chopped walnuts or chocolate chips

Steps

  1. Preheat your oven to 175°C (350°F) and grease a loaf tin (about 23cm x 13cm).
  2. In a large bowl, mash the bananas until smooth.
  3. Add the melted butter, sugar, egg, and vanilla extract, stirring well to combine.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the banana mixture until just combined. Avoid overmixing.
  6. Fold in walnuts or chocolate chips if using.
  7. Pour the batter into the prepared loaf tin and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the centre comes out clean.
  9. Let the bread cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

Tips

  • Use very ripe bananas for the sweetest and most flavourful bread.
  • Check the bread before the baking time ends to avoid overbaking.
  • Store banana bread wrapped in foil or in an airtight container to keep it moist.
