Caesar Salad with Grilled Chicken (Serves 2)

This homemade Caesar salad with grilled chicken features crisp lettuce, tender grilled chicken, crunchy croutons, and a rich, creamy Caesar dressing made from scratch. Ingredients
Salad
• 1 small romaine lettuce (about 200–250 g), washed, dried, and chopped
• 200 g chicken breast (1 large or 2 small)
• 1 cup croutons (about 40 g)
• 30 g Parmesan cheese, shaved
• 1 tablespoon olive oil (for grilling chicken)
• Salt and black pepper, to taste

Caesar Dressing
• 1 egg yolk
• 1 small garlic clove, finely minced
• 1 teaspoon Dijon mustard
• 1 teaspoon Worcestershire sauce
• 1 tablespoon lemon juice (fresh)
• 1 teaspoon anchovy paste (optional but traditional)
• 3 tablespoons olive oil
• 2 tablespoons finely grated Parmesan cheese
• Salt and freshly ground black pepper, to taste

Step-by-Step Instructions
1. Prepare the chicken
Season the chicken breast on both sides with salt and black pepper. Heat a grill pan or frying pan over medium-high heat and add 1 tablespoon olive oil. Grill the chicken for 5–6 minutes per side, until golden brown and fully cooked. Remove from heat, let rest for 5 minutes, then slice into strips.
2. Prepare the lettuce
Wash and dry the romaine lettuce thoroughly. Chop into bite-sized pieces and place in a large salad bowl.
3. Make the Caesar dressing
In a small bowl, whisk together the egg yolk, garlic, Dijon mustard, Worcestershire sauce, lemon juice, and anchovy paste until smooth.
Slowly drizzle in the olive oil while whisking continuously until the dressing becomes thick and creamy. Stir in the grated Parmesan and season with salt and black pepper to taste.
4. Assemble the salad
Add the dressing to the romaine lettuce and toss gently until all leaves are evenly coated.
5. Plate the salad
Divide the dressed lettuce between two plates. Arrange the sliced grilled chicken on top. Sprinkle with croutons and shaved Parmesan.
6. Serve
Finish with a light drizzle of extra dressing and a pinch of freshly ground black pepper. Serve immediately while the chicken is warm and the lettuce crisp.
